Quick and easy
“A light tart from the South of France, Provence making it the perfect summer dish.”
When visiting my dad’s town in the South of France over the summers, my mom would make tomato tart and call it pizza just to convince my brother and I to like it more when we were younger.
You will need:
1 pre-made puff pastry
Dijon mustard
Fresh tomatoes
Fresh thyme
Fresh oregano (optional)
Brushed olive oil
Season with salt and pepper
Grated gruyere cheese
Pre-heat the oven to 180degrees. Roll out the ready-made puff pastry that has come out from the fridge and leave aside till it’s room temperature. Cut the pastry to a size you want before lifting the pastry onto a baking sheet. With a fork, press the edges and poke the pastry before brushing olive oil around the edges. Fill the base of the tart with dijon mustard, spread sliced tomatoes and seasoned with salt, pepper, finelly chopped thyme and oregano. Lastly, garnish grated gruyere cheese all over the tart. Place the tart into the oven and bake for 25-30minutes till it becomes golden in colour and the tomatoes are cooked.
