“A savoury pie that consist of pasty crust filled with cheese and smoked bacon. Quiche lorraine, derived from the french region of Lorraine. It is a popular dish that was originally an open pie with a filling of custard with smoked bacon or lardons. It was only later that cheese was added to the quiche lorraine.”

During my childhood summer’s, going back to the south of France to see the family, I would always order a quiche lorraine for lunch. Later on in life, I was taught this dish during my basic training of french cooking.

“It’s main ingredients consist of chicken, chicken bone stock and rice. A dish adapted from early Chinese immigrants originally from the Hainan province in southern China. It is considered one of the national dishes of Singapore. Hainanese chicken rice most commonly associated with Malaysian, Hainanese and Singaporean cuisines, although it is also popular in Thailandand Vietnam.”

Hainanese chicken rice is one of my all time favourite dishes, I personally think this dish represents Singapore. Having cooked this dish for all the kitchen staff during my internship at Roux at the Landau. For full video tutorial, visit my Youtube channel.

“An all time christmas classic, almond crescents are a very basic tea cookie recipe. They’re very buttery with a pronounced almond flavour.”

Every christmas in Perth, one of my auntie’s would always bake a batch of cookies and give it to all the family. Now that I live in London, I continue the tradition by baking a batch of my own and eating it with a cup of tea.

Growing up, I admit for being one of the pickiest eater in the world. It was very difficult for my mom but she knew that she could never go wrong with spaghetti bolognese. Even when I used to visit dad at the hotel’s he’d work in, I would religiously order for both lunch and dinner spaghetti bolognese because I wanted nothing else but a simple bowl of pasta.
