Quick and easy

“Ready in 20 minutes and low fat, this fish dish is healthy and makes a great speedy supper.”

There will always be times when I cannot be bothered spending too much time cooking in the kitchen. Oven baked cod is simple, tasty and very nutritious. Low in fat and hits your 5-a-day.

You will need:
2 cod fillets

Blend:
2 garlic clove
1/2 lemon juice
1/2 lemon zest
3cm of ginger

Sauce:
2 chopped tin tomatoes
50ml white wine
1/2 teaspoon sugar
1 tablespoon ground coriander
Handful of pitted black olives

Start by pre-heating the oven to 180 degrees. Mean while, blend the garlic, lemon juice, lemon zest and ginger till it’s a smooth paste. In a sauce pan, bring the tomato sauce to boil on medium to high heat and mix in the blended paste, white wine, sugar, coriander, seasoned with salt and pepper. Taste and alter the seasoning if needed. Transfer the tomato sauce into a baking dish and scatter over the sliced olives. Lay the cod on the sauce, and scatter over the lemon zest and coriander powder. From preventing the fish from drying, cover the baking tray with a layer of tin foil. Oven bake for 10-12minutes, until cooked through. Squeeze some lemon juice for a more citrusy taste and  serve right away with a bowl of basmati rice or some crusty bread.
