Cherry tomato with feta pasta bake

Quick and easy 

“Pasta oven bake with cherry tomato and feta.” Perfect for summer.

This dish can be served as vegetarian. What i love about this dish is the fact it is made in less than 30mins.

You will need:

Pasta of your choice: spaghetti, penne, casserecce or oriecce
1 x block soft feta cheese
2 x punnet cherry tomato
2 x garlic cloves / 1 x teaspoon garlic paste
1 x lemon, zested skin
Bunch of basil
1 x chorizo (optional)
Roasted pine nuts and chilli flakes

Seasoning:
1 x half lemon
Salt,
Pepper
Drizzle olive oil
Oregano powder
Chilli flakes
Parmesan

Boil the pasta of your choice with salt and olive oil then drain the water oil and drizzle olive oil and leave aside to cool. Slice the cherry tomatoes and basil before placing in a baking tray. Zest fresh lemon, finely chop garlic, drizzled olive oil, salt, pepper, lemon juice, oregano powder and mix well before placing a block of feta and sliced chorizo into the middle of the baking tray. Oven bake till chorizo is crispy and the cherry tomatoes are softened. Slowly mix the pasta of into the baking tray and taste for seasoning if needed before finishing it off with pine nuts, chilli flakes and parmesan.
