Quick and easy

Thai beef salad is one of the families favorite summer dishes, it’s light, spicy and full of flavor, bringing me back to the summers back in Mauritius.
You will need:
Salad:
1 tablespoon vegetable oil
1 sirloin steak
1 mango
1 big red onion
1 packet of cherry tomatoes
1 cucumber
2 little gem lettuce
1 mix leaf salad
Dressing:
2 lemons
1 1/2 – 2 tablespoon fish sauce
1 – 1 1/2 tablespoon sugar
1 tablespoon dark soya sauce
3 garlic
1 bunch of coriander
4-5 red chillies
Start by preparing the salad dressing by finely chopping the chilli, coriander and garlic. Squeeze lemon juice then add the fish sauce, soya sauce and sugar. Mix well and taste if there should be more fish sauce or sugar that needs to be added. Pan fry the finely sliced red onions on medium to low heat in some oil till caramelised and crispy then set aside to cool. Chop the cucumber, cherry tomatoes, mango and gem lettuce. Mix well together along with the mixed salad leaves and pan fried red onions. In a separate pan, on medium to high heat, season both sides of the sirloin steak with salt and pepper before searing it for 2-4minutes for the steak to be medium rare. Set the steak aside and leave to rest, that’ll allow the meat to release it’s excess juice (blood), use a napkin and tap off the excess juice before slicing it into medium to thin strips. Serve the salad right.
